From Source to Spirit
Production Process
Sugarcane Harvest
SeasonalFresh sugarcane is harvested and processed into molasses or pressed for juice, the foundation of all rum production.
Fermentation
24–72 hoursMolasses is mixed with water and yeast in large fermentation tanks. The yeast converts sugars into alcohol over several days.
Distillation
6–12 hoursThe fermented wash is distilled in column stills or traditional pot stills to concentrate the alcohol and develop flavour compounds.
Ageing
1–23 yearsThe clear spirit is aged in charred oak barrels, often ex-bourbon casks, where it develops colour, complexity and smoothness.
Blending
WeeksMaster blenders combine rums of different ages and styles to achieve a consistent, balanced final product.
Bottling
ContinuousThe finished rum is filtered, diluted to bottling strength, and bottled under strict quality controls.
