From Source to Spirit
Production Process
Botanical Selection
OngoingJuniper berries, coriander, angelica root, citrus peel and other botanicals are carefully sourced and inspected for quality.
Neutral Spirit
ContinuousHigh-quality grain neutral spirit is distilled to a high purity, providing a clean canvas for the botanical infusion.
Maceration
12–48 hoursSelected botanicals are steeped in the neutral spirit, allowing their essential oils and flavours to infuse over time.
Distillation
6–8 hoursThe botanical-infused spirit is redistilled in copper pot stills. Vapour infusion baskets may also be used for delicate botanicals.
The Cut
Critical momentThe distiller makes precise cuts between heads, hearts and tails, selecting only the finest heart of the distillation run.
Bottling
DaysThe gin is rested briefly, diluted to bottling strength with pure water, and bottled — most gins are unaged.
The Story of Beefeater (Kennington)
Beefeater is the only premium gin still distilled in central London. The distillery in Kennington has been producing London Dry Gin since 1863, using a recipe of nine botanicals that remains unchanged. Master Distiller Desmond Payne, the longest-serving gin distiller in the world, has overseen production since 1995.
